Since so many of us are cooking more than we ever have before, I thought it would be fun to share my favorite recipes.

These are tried-and-true favorites that often make a weekly appearance in our house.

  • I have chipotle chilli powder which adds an extra kick – I usually use closer to 1 tablespoon chilli powder instead of 2
  • I skip the brown sugar
  • Still delicious without green chiles or chicken stock

Israeli Couscous with Cherries by Food Network Kitchen

  • I always used Trader Joes’ dried bing cherries since they’re a staple in my pantry
  • Often make without the feta since I don’t always have it

The Best Chicken Marinade by Mom on Timeout

  • I sometimes I add in chopped jalapeno or red pepper flakes to make it spicy

Chicken Milanese and Escarole Salad by Smitten Kitchen

  • This is always a hit whether for dinner with my husband or a casual dinner party. I follow the chicken milanese recipe exactly, but mix things up with a salad depending on what I have.

  • I did not have mushrooms or milk and it still turned out great
  • Added in some dried thyme and rosemary
